PITHIA RECIPE

Ingredients:
Half a kilo of chickpeas, 1 large onion, 2 cloves of garlic, 1 tomato, chopped spearmint or dill, salt, pepper and flour as needed.

Preparation:
Put the chickpeas you’ve soaked overnight in a blender along with the onion, garlic, and tomato and grind. Add the herbs, salt, pepper and as much flour as needed to the pulp to make it firm. Take a spoonful from the mixture and fry it over medium heat.
